Ingredients

1.5 lbs mushrooms, cleaned and chopped or thickly sliced 1 medium onion, finely chopped 3 TBS butter 3 TBS italian parsely, chopped 2 TBS flour 1 cup white wine (optional) 2 cups broth (chicken, vegetable or beef) 3/4-1 cup heavy whipping cream salt and freshly ground pepper to taste

Directions

Use a large, deep pan. Melt 1 TBS butter in the hot pan, then add all chopped/sliced mushrooms and stew for about 10 minutes. Season with salt and freshly ground pepper to taste and add parsley. In a different saucier or pan melt last 2 TBS of butter, and stir flour into the melted butter. Continue to stir until smooth. Pour wine and broth into flour mixture and bring to boil, continually stirring for several minutes. Salt and Pepper to taste. Finally add heavy whipping cream and mix (do not boil) and mushrooms. If you like different types of mushrooms, feel free to add some “exotic” (portobello, crimini, etc.)dried mushrooms, after having soaked them in the wine for about 20 minutes,to the cooking mushrooms.
